Here in Toronto, there are school MMA called "Xtreme Couture" gym respectable to go into MMA and start to fight in some smaller leagues and you work in big leagues like the UFC or EliteXC? "Xtreme Couture was founded by Randy Couture, World Heavyweight Champion of the UFC, and some fighters in the UFC are also instructors the Toronto facility.
